I subscribe by email to the Just a Pinch Recipe Club. Each email is full of yummy ideas. When I saw the title for this one, I just had to fix them for my hubby for Father's Day. He's not a big fan of pretzels, so I made a few adjustments to the the topping ingredients. Be sure to have a full glass of milk when you sit down to eat these, they're rich!
INGREDIENTS
2 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
3/4 c unsalted butter (room temperature)
1 c dark brown sugar
1/2 c granulated sugar
2 large eggs
1 Tbsp vanilla extract1/4 cup smooth peanut butter
1 c semi-sweet chocolate chips
1 1/2 c coarsely chopped pretzels
TOPPINGS
1/2 c peanut butter chips
1/2 c chocolate chips
3/4 c coarsely chopped pecans
Preheat oven to 350 degrees. Spray a 9X13" pan with cooking spray. In a small bowl, whisk flour, baking soda and salt. In a large bowl, beat butter and both sugars at medium speed until fluffy. Add eggs and vanilla. On low speed, beat in dry ingredients just until incorporated. Mix in peanut butter. Stir in 1 cup chocolate chips and 1 1/2 cups pretzel pieces.
Spread the batter into the baking dish.
Sprinkle toppings evenly over the batter.
Bake until a nice golden brown. (35 minutes in my oven) Let cool completely before cutting apart. I like to use a plastic serrated knife when cutting this type of dessert.
